Kokosovo-čokoladni mafini // Chocolate-coconut muffins

Obožujem čokolado in obožujem kokos. Zaželela sem si mafine, ampak se nisem mogla odločiti kakšne naj naredim. Zato sem malce pobrskala po internetu in dobila super recept za kombinacijo obojega; čokolade in kokosa!
I love chocolate and I love coconut. I wanted muffins, but I could not decide what to do. Therefore I looked on the internet and got a great recipe for a combination of both; chocolate and coconut!


Za 24 mafinov potrebujemo: For 24 muffins you need:
80 g masla   // 80 g butter
60 g sladkorja // 60 g sugar
1 vanilijev sladkor  //  1 vanilla sugar
180 g moke // 180 g flour
ščepec soli // pinch of salt
1 pecilni prašek // 1 baking powder
2 jajci // 2 eggs
150 ml mleka // 150 ml milk
60 ml sladke smetane  // 60 ml sweet cream
60 g kokosove moke  // 60 g coconut flour
100g sesekljane bele čokolade  // 100g white chocolate
80 g sesekljanih olupljenih mandljev  // 80 g almonds



Penasto umešano: maslo, sladkor in jajca.
Dodamo: vanilijo, mleko, smetano, moko, pecilni prašek, sol in kokosovo moko. Dobro premešamo.
Dodamo še: čokolado in mandlje. Ponovno premešamo. 
First mixe: butter, eggs and sugar. 
Add: vanilla, milk, cream, flour, baking powder, salt and coconut. Mix thoroughly
Then add: chocolate and almonds. Mix again.



Maso nadevamo v modelčke in pečemo približno 20 minut na 180°.
Fill the molds and bake for about 20 minutes at 180 °.

Za kremo potrebujemo:   For cream you need:
125 g Mascarpone  //  125 g Mascarpone
250 ml sladke smetane //  250 ml sweet cream
5 žlic kokosove moke  // 5 spoons of coconut
1 žlico sladkorja v prahu  // 1 spoon of icing sugar



Mascarpone, smetano in sladkor dobro zmešamo. Na koncu dodamo še kokosovo moko in vse skupaj postavimo v hladilnik za vsaj 20 minut. 
Mix: Mascarpone, cream and sugar. Finally add the coconut and place it in the refrigerator for at least 20 minutes.



Sama sem najprej naredila kremo, jo postavila v hladilnik in nato naredila mafine. Ko so bili mafini spečeni, je bila krema ravno pravšnja za krašenje. 
I first made cream, set it in the fridge and then made muffins. When they were baked, cream was just perfect to decorate.
